Cut of steak: This cut comes from the short loin and is the same as a T-bone or porterhouse steak, but without the tenderloin section. It's a semi-tender cut with good flavor and marbling that makes it great for grilling, roasting and pan-searing. The strip side is leaner than the filet side, so if you like your steaks very rare or medium rare you'll want to take care when cooking this one. How to cook it?
