Beef chuck roast is a great value, and it's the perfect cut for slow cooking. This versatile cut can be used for roasts, pot roasts and stews. Beef chuck roast is a lean cut of beef from the shoulder area of the animal. It has a high percentage of connective tissue that makes it ideal for long, slow cooking methods like braising or slow-roasting in an oven or crockpot (just add some liquid). Because of its high collagen content, when cooked slowly over time this cut becomes tender enough to fall apart easily—perfect for tacos!
